Ingredients:
500gmalmond meal
200gm raw sugar
200gm butter
6 eggs
30ml orange blossom water
1 orange zest and juice
Method: Place almond meal, orange zest, juice, melted butter, orange blossom water in a large bowl. Separate eggs then whisk egg yolks and 400g sugar and vanilla till thick and foamy. Add to dryngredients. Then make meringue with whites and remaining sugar and whisk until thick then fold everything together a nd mix until smooth. Leave in the coolroom for 30 minutes before placing into silicon molds and bake at 160’C for 30minutes , fan speed 3 humidity 50%.

250 gmcream cheese
½ cups castor sugar
1/4orange zest and juice
1/4lemon zest and juice
1/8tbls vanilla bean
Blend everything together until smooth.
