Corn Fritter

2kg corn kernels

1 red onion

2 garlic

1 bunch coriander

2 chilli

Salt and pepper

100g maize flour

4 eggs

100g fermented chilli paste

Roast corn in the cob till dark and blackened. Blend half the corn with onion, garlic, coriander, chilli and then mix with

remaining ingredients.

Corn Stock

kg corn husks

1kg water

1 onion

Handful bay leaves

Handful thyme

Peppercorns

Simmer for 30 mins and strain.

Miso Corn Puree

1kg corn kernels

100g cultured butter

2 garlic cloves

2 tbls miso paste

Cracked pepper

1 ½ cups corn stockCook corn kernels in butter with garlic and miso until tender. Blend will smooth with remaining ingredients and pass through

fine chinois.

Charred Corn Salsa
